Healthy & Skinny Lasagna

What has melted, almost-roasted cheese on top and makes your heart skip a beat and your mouth drool a bit? Yes, that's right, Sherlock! Its a Lasagna. :-D And vegan one, if you want it to be!

It has cheese (well, a little cheese hasn’t hurt anyone. Not yet, at least ;)) but not so much that you’d be scared to touch it. To make up for the cheese, it is packed up with nutrients.

It has colors… red, green and white and will make you jump up and down in glee as you chew this beauty.

And did I mention how nutritious it is? It has Hummus and Spinach. All that protein and the green quotient should be good, no? Well, it is. :-D

This is one of the easiest and fastest Lasagnas I’ve assembled. The ingredients are all simple, and the result was heavenly. Literally. Am not kidding. Still not convinced? Pch… You gotta try this to be convinced.

This is a great do-ahead which you can also serve when you are hosting a party, especially if your guests are calorie-conscious or eating healthy. Just assemble the lasagna and refrigerate it for up to 24 hrs in advance.

Spinach & Hummus Lasagna
Level – Medium
Assembling time – 10 min, if you have the pesto and hummus ready
Baking time – 20 min at 185 C
Serves 4, for main course

Ingredients
Lasagna sheets - 6
Spinach Pesto – 1 C
Hummus – 1 C
Vegetable mix – 1 C [I used onions, spring onions and green bell peppers]
Red chilli paste – 1 Tbsp
Dried oregano – 1 Tsp
Olive oil – 1 Tsp
Salt – To Taste
Mozzarella cheese, grated – 1 C [Optional]
Paneer (Cottage cheese) – 1/4 C [Optional]

Instructions
Cook the lasagna sheets per the instructions on the box. Keep them aside.
Heat the oil in a pan, add the red chilli paste and sauté the veggies in this. Sprinkle the oregano on this. Add salt and let this cook on a low flame for 5 min
Once the veggies are done, start with the assembling of the lasagna.
Butter/Grease a oven-safe glass bowl and cover it with the lasagna sheet.
Spread the hummus on this and place another lasagna sheet on this.
Spread the spinach pesto and sprinkle this with cottage cheese, if using.
Place a lasagna sheet on this and place the cooked vegetables in a layer on this sheet.
In this way, assemble the lasagna by spreading the hummus, pesto and veggies in each layer, separated by the lasagna sheets.
Sprinkle the cheese. if using, over the assembled lasagna.
Bake this in a pre-heated oven at 185C for 20 min, or till the cheese melts and starts to get roasted.
Cut in 2 inch squares and serve hot.

  3. This lasagna sounds divine!!! I'm a (almost) full blood Italian so I'm used to making the normal (not tooo greasy) lasagna and i absolutely love it, but your version DEFINITELY deserves a try!!
