Thai curry flavored Poha

Yeah, I know how it sounds. Thai curry and Poha in the same sentence. :)
But it is a great combination, indeed. Veg Thai curry paste is nothing but a great mix of ginger, garlic, coriander, cumin and onions and of course, some specific Thai herbs like basil and Kafir lime leaves. Essentially, its like your regular South Indian sambar powder ;-)


Thai curry flavored Poha

So when I had some Thai curry paste left over in the fridge, and I had to eat a healthy , yet quick meal, I resorted to this quick meal, something I made in less than 15 min, since I had the curry paste ready in the fridge.

Poha

I used thick poha to make this, a staple you must keep in your pantry if light food is on your mind. This is made out of rice, so it satisfies the carb urge, but is so light on the stomach that it doesn’t feel like a full meal!

Thai-curry flavored Poha
Level – Easy
Preparation time – 15 min, including cooking, if curry paste is ready
Serves – 1


Ingredients
Thick poha - 1/2 C, Soaked in water for atleast 15 min and drained
Thai red curry paste - 1/4 C
Cottage cheese cubes - 1/2 C, thawed if using frozen
Coriander leaves - for garnish
Oil - 1 Tbsp
Salt - to taste


Instructions
Heat a pan and pour oil in it. Sauté the red curry paste in that oil.
Sauté the cottage cheese cubes along with the red curry paste.
Sprinkle salt on this.
Now mix the drained beaten rice with the curried cottage cheese cubes.
Garnish and serve hot.


Thai red curry paste
Level – Medium
Preparation time – 20-30 min
Makes a batch


Ingredients
Onion – 1 , medium
Lemongrass – 1 stalk
Red chillies – 2 , large
Garlic – 5-6 cloves
Ginger – an inch sized piece
Cumin – 1 Tsp
Coriander – 1 Tsp
Pepper – 1 Tsp, freshly ground
Lemon juice – Juice of one lemon


Instructions
Dry roast the cumin and coriander seeds together and let them cool.
Mix all the ingredients together in a mixer-grinder to make a thick paste.
Store in a cool, dry container and use as required
