It always looked like such a waste... throwing away all those greens that come with the cauliflower head. I knew they had to be healthy, but never knew how to cook them.

I guess we could use turnip greens in a similar way, or combine both the greens for a distinct flavor too. I haven't tried it all yet, but am gonna do that soon.
This feels like a burst of flavors, fills the stomach with all the fiber, and feels very healthy, which it is! So here is the recipe -
Ingredients
- Cauliflower leaves - 5-6, including the thick stalk. Cleaned and chopped into big pieces
- Radish leaves - leaves from 3 radishes, cleaned and coarsely chopped
- Butter - 10gm
- Walnuts - 4-5, soaked in water for 30 min
- Garlic - 8-10 cloves, chopped
- Red chili flakes - 1Tsp [I used the smoked cayenne pepper flakes]
- Lemon juice- Juice from 1 lemon
- Cheese slices - 2 [I used the Amul cheese slices. You can use any cheese, grated or sliced], cut in long strips
- Hot water - 500ml
- Milk - 250 ml (Optional)
- Salt
Instructions
- Steam the leaves in a microwave.
- In a pan, heat the butter and sauté the steamed leaves along with the chopped garlic cloves and soaked walnuts
- Add the red chili flakes to this, and sauté for another 5 min on a medium flame.
- Once this cools, purée this using a hand blender or a mixer to make a paste
- Move this paste to a deep saucepan and add water to this to get a soup like consistency.
- If using milk, add milk to this soup and bring it all to a boil.
- Check taste and add salt
- Stir in the cheese strips to the soup
- Take the soup off the heat and stir in the lemon juice
- Serve warm, with toasted bread
