Cauliflower greens soup

 It always looked like such a waste... throwing away all those greens that come with the cauliflower head. I knew they had to be healthy, but never knew how to cook them.
A quick internet search landed me at this page, which inspired me to go make this soup.


 
I guess we could use turnip greens in a similar way, or combine both the greens for a distinct flavor too. I haven't tried it all yet, but am gonna do that soon. 
 
 
 
This feels like a burst of flavors, fills the stomach with all the fiber, and feels very healthy, which it is! So here is the recipe - 



Ingredients

  1. Cauliflower leaves - 5-6, including the thick stalk. Cleaned and chopped into big pieces
  2. Radish leaves - leaves from 3 radishes, cleaned and coarsely chopped
  3. Butter - 10gm
  4. Walnuts - 4-5, soaked in water for 30 min
  5. Garlic - 8-10 cloves, chopped
  6. Red chili flakes - 1Tsp [I used the smoked cayenne pepper flakes]
  7. Lemon juice- Juice from 1 lemon
  8. Cheese slices - 2 [I used the Amul cheese slices. You can use any cheese, grated or sliced], cut in long strips
  9. Hot water - 500ml
  10. Milk - 250 ml (Optional)
  11. Salt

Instructions

  1. Steam the leaves in a microwave.
  2. In a pan, heat the butter and sauté the steamed leaves along with the chopped garlic cloves and soaked walnuts
  3. Add the red chili flakes to this, and sauté for another 5 min on a medium flame.
  4. Once this cools, purée this using a hand blender or a mixer to make a paste
  5. Move this paste to a deep saucepan and add water to this to get a soup like consistency.
  6. If using milk, add milk to this soup and bring it all to a boil.
  7. Check taste and add salt
  8. Stir in the cheese strips to the soup
  9. Take the soup off the heat and stir in the lemon juice
  10. Serve warm, with toasted bread
