Zucchini Casserole




Ingredients
Zucchini - 1
Broccoli - 1 head, split into florets
Bell pepper - 1, cut in inch wide pieces
Pasta sauce - Red -1C
Mozzarella cheese - 1C , grated
Garlic -5-6 choices, chopped fine
Onion - 1/2C , chopped fine, optional
Dried herbs - 2Th [I used Oregano, Basil, Red chili flakes]
Salt -Taste
Olive oil - 2Tbsp

Instructions
Heat the oil in a pan, and sauté the garlic and onion pieces.
Add the herbs and sauté a bit more.
Add the vegetable pieces, and sauté more.
Mix in the salt and herbs.
Add the pasta sauce and sauté for 2-3 min on medium flame.
Place all these ingredients in a thick glass pan.
Sprinkle with mozzarella cheese

This should be baked at 180C for at least 40min before serving.
