Easy & Healthy Stir-Fry Noodles

Yeah, by now, it is known that I cannot cook something that doesn't a little health associated to it. That means, greens, fresh veggies, some protein etc.

So, this week was noodle mania week at home. I discovered Lotus Foods' Brown rice and millet noodles, and we love the consistency and taste of these.

This is an easy recipe that I made one weeknight.

Lo-Mein Noodles



Recipe adapted from - Pinch of Yum's  Lo-Mein Noodles

Ingredients -
Bell peppers - 2; half of each color, cut in long, thin strips
Onions - 1/2 of a large one, cut in thin strips
Garlic - 3-4, chopped fine
Green chilli - 2-3, Chopped fine
Shallots - 4-5, the white part cut into small pieces
Salt - To taste
Sesame oil - 1 Tbsp
Tofu or paneer(Cottage cheese) - 1/2 C, cut in thin strips
Lime juice - Juice of half a lime

For the sauce -
Sesame oil - 1 tbsp
Soya sauce - 1/2 C
Red chilli flakes - I added a full tbsp

Instructions -
- Boil Ramen per instructions and drain it. Rinse in cold water and keep aside
- Mix Soya sauce, Sesame oil and chili flakes together in a glass. This sauce should be pouring consistency
- Heat oil in a deep pan and saute the onions, green chillis, garlic and the peppers, in this order. Add greens, if using at the end. If adding egg, it can be added now for a scramble or diced. If using tofu or paneer, I'd recommend sautéing it first and then adding it here
- Toss in the Ramen with the veggies, add salt and pour the prepared sauce over this
- Toss everything together and stop the heat. Garnish with coriander leaves or shallot greens
- Pour lime juice on this and toss once again
- Serve hot
