Technically this one’s not a vegetable salad, given that tomato is also a fruit. But the addition of raw onions (*gasp*, yes! ;-)) makes it one, I guess.
Addition of onions adds a new dimension and taste to this fresh salad, making it a wholesome meal. And the dressing… the simplicity of olive oil mixed with lemon juice. Need I say more!

Apple & Tomato Salad
Preparation time – 15 min

Ingredients
Apples – 2 , medium , cubed
Tomatoes – 2, medium , cubed
Onions – 1, sliced thin
Olive oil – 1 Tbsp
Lemon juice – 1 Tbsp
Salt – to taste
Red chilli flakes – to taste
Coriander leaves – a few, optional, for garnish
Instructions
Mix wedges of tomatoes and apples, add slivers of red onion, a few red-pepper flakes and cilantro. Dress with olive oil and lemon juice.
Sudden craving for apple and tomato salad brought me here, thanks for letting me realise that that is not such a weird combination as it sounds :)
