Roasted tomatoes and French beans salad

This is one of those simple salads that you can serve as an appetizer or a full meal.

Its best served with salad leaves also, but I decided to give it a miss. It tasted good nevertheless. Oven roasted tomatoes is one of those simple pleasures I’ve discovered and begun love in this month.

Roasted Tomatoes & French Bean salad

Choose tender French beans because they can make or break this salad. The more tender they are, the best. Also, feel free to replace the mozzarella cheese with any other cheese that catches your fancy. I am yet to outgrow Mozzarella, and hence it will be featured heavily in most of my salads. :-)

Roasted Tomatoes & French Beans salad
Preparation time – 30 min
Level – Easy
Serves – 1

Ingredients
Tender French beans – a handful, cleaned
Tomatoes – 2, sliced thin
Mozzarella cheese – 1/2 C, cubed
Red onions – 1, sliced thin
Olive oil – 1 Tbsp
Salt – to taste
Pepper – To taste
Salad leaves – A couple, optional
Balsamic Vinegar – 1 Tbsp

Instructions
Steam the French beans in a microwave for a couple of min
Roast the sliced tomatoes in a pre-heated oven for 20 min at 220 C
Sauté the red onions in olive oil till they turn a golden brown. Pour the balsamic vinegar to this and cook the onions in the vinegar for a couple of min on a medium flame. Remove from heat.

Plate all the ingredients together. Sprinkle salt and pepper and serve.
