Another simple, easy and flavourful salad featuring bell peppers and beans.

Beans are rich in protein and am making the most of them this month. I love the taste of pressure cooked beans and how they can be paired with almost anything to instantly up the protein content of the dish.

Roasted Bell Pepper & Bean salad
Preparation time – 30 min
Serves - 2
Level – Easy

Ingredients
Red bell peppers – 2, sliced
Green bell pepper – 1, sliced
Black beans or Black chana – 1/4 C, soaked in water overnight and pressure cooked
Onion – 1, finely chopped
Olive oil – 1 Tbsp
Mozzarella cheese – 1/4 C, cubed
Salt – To taste
Pepper – 1 Tsp, crushed
Basil leaves – a couple

Instructions
Drizzle the olive oil, salt and pepper and grill the peppers for 10 min.
Toss with the cooked beans and onion.
Top with mozzarella cheese and shredded basil leaves and serve.
