Fattoush salad

Here’s a classic salad recipe… something so famous that it needs no introduction!

Fattoush salad with olive oil dressing

One of those easiest salads to make, Fattoush salad is also very versatile, atleast in my opinion! :)

Fattoush Salad with Ricotta Cheese

Easy Fattoush salad
Preparation time – 10 min
Assembling time – 5 min
Level – Easy

Ingredients
Cucumbers – 2-3 medium , unpeeled and cubed
Tomatoes – 2-3 medium , cut in chunks or Cherry Tomatoes – 1.5 C
Onions – 2 medium, cubed (Spring Onions are preferred with their greens)
Paneer(Cottage Cheese) – Made from 1/2 Lt milk or 1/2 C, crumbled/shredded/cubed
Whole wheat bread – 3 slices, cut in cubes
Coriander leaves – a handful, for garnish
Sumac powder – 2 Tsp, for garnish, optional

Dressing
Olive oil – 1/4 C
Lemon juice – 1/4 C
Black pepper – 1 Tsp, ground
Salt – To taste
Garlic – 5-6, chopped/crushed/minced

Instructions
Toast the bread cubes at 230 C in a pre-heated oven for 5 min or till they are golden brown
Meanwhile, assemble the vegetables and the paneer pieces in a large salad bowl.
Mix all the ingredients for the dressing and pour half the dressing on the salad. Mix well.
Just before serving, mix the toasted bread pieces and the rest of the dressing.
Garnish and serve.
