This is one of those easy green salads that most of us make when we have nothing better to eat.
Owing to my new-found mustard love, I’ve customized the honey-mustard dressing a bit in this recipe and kept the vegetables simple.
You can certainly do without the sun-dried tomatoes and replace then with pitted olives or fresh tomatoes. I used them here because of the colour combination and the crunch they would provide to the salad.
Easy green salad with honey dressing
Preparation time - 15 min
Makes a salad for one person
Ingredients
Salad
Cucumbers - 2, diced
Zucchini – 1, diced
Iceberg lettuce - couple of leaves, shredded
Sun-dried tomatoes - a handful [I dried cherry tomatoes in an oven and froze them]
Mixed Sprouts - 1 C, boiled
Dressing
Honey – 2 Tbsp
Mustard powder – 1 Tbsp
Extra virgin olive oil – 1 Tbs[
Lemon juice – 1 Tbsp
Lemon zest – 1/2 Tsp
Salt – to taste
Dried Thyme - 1 Tsp
Green chilli - 1 small, finely chopped
Instructions
Mix all the ingredients for the dressing.
Toss all the salad ingredients together in a big bowl and refrigerate.
Serve by pouring the dressing over the vegetables.

ReplyDeleteI hope he does... I haven't discussed it with him yet. Am scared of his disapproval in which case I'll have to work on a whole new salad plan for the entire month! :)
