This one is definitely one of the best salads I’ve eaten , and I give all the credit to the grilled cottage cheese.
Grilled Zucchini with cottage cheese salad
Preparation time – 15-20 min, including time taken for cottage cheese to thaw if using frozen cheese
Serves – 1
Ingredients
Salad
Zucchini – 2, diced into inch-sized pieces
Carrot – 1 , diced into inch-sized pieces
Onions – 1, sliced
Garlic cloves – 4-5, minced
Cottage cheese – 1 C [I used Amul Paneer]
Dressing
Olive oil – 1 Tbsp
Salt – to taste
Chilli powder – 1 Tsp
Mustard powder – 1/2 Tsp
Instructions
Toss all the vegetables in a big bowl along with the dressing ingredients.
Spread the contents on a wide plate and grill for 8-10 min, or till the vegetables are slightly cooked and the cottage cheese begins to char.
Serve hot.

ReplyDeleteVidhi, If you have an oven with a grill mode, you can directly put the vegetables in that mode.
DeleteIf you have to grill without an oven, barbeque is another option. If that's not feasible, you can grill the vegetables in a pan too.
